Spira lets you to choose with one is the default. But I did not find a way to set to which workflow the requirement needs to follow, if it is different from default. Situation: I have created a sorted of requirements and they followed the default workflow (lets call WK1). I have created a new workflow and set-up it as the default (lets call WK2).
