However the risk scores are stored in the Risk history, so you can see the original risk and the residual risk that way.  If you create specific statuses in the workflow for the different stages you want to capture the risk at, you could even correlate the risk score with the status.  Then a custom report will be able to easily pull the original risk score/values and the subsequent ones.
