Hello,
By waiting for the cruise control plug-in, I would like to know how the build version is managed....I didn't found any places where the builds could be set manually in case you don't have any automatic build tool....

You can create them using the SOAP API (which is how the plugins manage it). There is no place in the user interface to create builds at present.
